Mini Taco Cups with Wholly Guacamole & Cabot Cheese

My kids have got to be some of the world’s pickiest eaters. And, even if they can all agree on a meal, everyone needs a substitution of some sort or another. Even when we make something as simple as tacos they all eat them differently. Some like corn tortillas, some flour, and some crunchy tacos.

And yet still others do not like any form of tortilla at all. Who are these kids? And how are they my children when they don’t love tacos… as is?!

Nonetheless, we decided to change it up a little with the last Taco Tuesday at the house and see how the kids did with it. It did in fact go over well, especially with the youngest two. They are the ones that prefer to just eat chips with their taco fixings rather than put them into a tortilla.

Plus, with 8 of us normally eating dinner, we have a bit of a problem with portion control in order to make sure everyone gets enough. Therefore, I found a solution: Individual Taco Cups.

Mini Taco Cups

By making 8 individual mini taco cups, each member of the family gets their fair share of the simple dinner. This also makes it easier for the girls to eat their chips with their taco fixings. My mini taco cup made exactly 3 abundantly-filled tacos using corn tortillas.

Adjusting the helping a bit for each member helped but we were all able to get plenty, plus still have a bit to spare. Not to mention, making it is just as easy as making taco bowls.

Ingredients:

  • 1 lb ground beef
  • 1 pkg taco seasoning
  • corn and/or flour tortillas or hard taco shells
  • 1 can refried beans
  • Wholly Guacamole Spicy snack packs
  • Wholly Salsa Hot
  • Cabot Seriously Sharp Cheddar
  • Optional: sour cream, lettuce, tomatoes, etc

Directions: 

  1. Brown meat and add seasoning.
  2. Grate cheese.
  3. Warm tortillas.
  4. Warm up beans.
  5. Layer small bowl with beans, taco meat mixture, guacamole, salsa, and cheese. Adding your optional choices in these layers as well. (These are all the extras my kids will not touch).
  6. Grab chips and eat. Or use a spoon to serve up individual tacos from the fixings in the taco cup.

Now, I realize it may look like a layered dip to you. But, at our house, telling the kids they are each getting their own individual taco cup means they feel special. AND they seem to eat more without the complaints.

Each mini taco bowl can be served to their liking and we know that everyone can get plenty.

Wholly Guacamole

Wholly Guacamole has such a great selection of flavors and products to choose from. In order to let the kids choose from the spicy or classic guacamole, we used the snack packs for the the taco cups. This way, I could eat spicy and they could eat classic, and none of it went to waste.

They also offer Wholly Salsa, which comes in 8 different flavors. It is absolutely amazing. Always fresh and has no preservatives.

The Guacamole & Spicy Pico and the Avocado Verde are my favorites. We used both the Medium and Hot salsa for the taco cups–again so we could give the kids a milder choice.
