When we don’t have time to cook enchiladas, we have a second favorite that the kids even ask for. Colby and I like that the concept is an easy one. You know, a quick dinner idea for those cold nights where you need a hearty meal in less time. That is what lead us to this one-dish supper. Back in school, I remember having a Mexican Jambalaya. At least that is what the menu called it. Colby and I wanted to recreate a simple version of the lunchtime dish so we tried. We came up with our own version of jambalaya that is still a favorite in our family.
- Wolf® Brand Chili
- white rice
- cheddar cheese, shredded
- corn chips
- onions, optional
- chives, optional
- Boil water for rice. Cook per instructions until done. Drain and set aside.
- Warm Wolf® Brand Chili to desired eating temperature.
- Add rice to a bowl and pour chili over. Top with cheese, onions and corn chips based on personal tastes.
- Serve and enjoy!
