Summer Lemonade and Iced Coffee Stand with Red Velvet Cake Balls

Do your kids like to set up a lemonade stand? My daughters are quite the little entrepreneurs. My 9 year old especially. She always has great business ideas and likes to raise money for charity. She asks if she can have a lemonade stand daily. Not even kidding! Daily.

Luckily, our neighbors are friendly and always ready to stop and see what they have to offer. Just a few hours in the front yard and they can make a decent amount of money to then hand over to their charity of choice for the day. They often pick a charity based on what is going on at church or one they recently learned about. At the moment, their favorite charity to donate to is the North Texas Food Bank. Any time they can help children in need they tend to jump at the chance. I cannot help but proud of them for that.

This time, we decided to add a new twist to the Lemonade Stand. With the warm Texas heat, we decided that a nice glass of International Delight Iced Coffee would be a perfect addition to their stand. A little bit of something for everyone. Lemonade for the kids and coffee for the adults. Or both… that works too.

Our oldest daughter likes to bake with her younger sisters, so they made some moist red velvet cake calls to share with their customers as well. They figured the red, blue… and yellow would go with a patriotic summer theme. Whatever works best for them!

We used the incredibly easy-to-use TomKat Studio’s Summer Lemonade and Iced Coffee Stand printables in order to spruce up our stand a bit. The blue and yellow colors perfectly blended with the yellow homemade lemonade and blue International Delight logo. And then we has our red velvet cake balls covered in white chocolate. The girls cut up each of the printables and we set up a table and chairs outside in the girls’ usual spot.

The neighbors quickly noticed the new signage and stopped by for a cup of the International Delight Iced Coffee we added to the menu. Paired with a cake ball, it made for the perfect afternoon treat.

And the girls were simply delighted to have an another excuse to set up their Lemonade… Iced Coffee… Stand. It was a hit and they have a good handful of money to once again donate to charity.

Red Velvet Cake Balls

Ingredients:

  • 12 oz. Dr. Pepper (or other coke flavored soda)
  • Red Velvet cake mix (or other flavor)
  • Cream Cheese frosting (or flavor of your choice)
  • Almond Bark

Directions:

  1. Preheat oven according to directions on cake mix box.
  2. Mix cake mix with 12 oz. of Dr. Pepper. Beat until well blended.
  3. Pour into baking pan and bake according to cake instructions.
  4. Once cake has cooled, cut in half and crumble each half in a separate bowl.
  5. Add 1 cup frosting to cake crumbles and mix until desired consistency is reached.
  6. Roll mixture into small balls and set on wax paper.
  7. Chill for 30-45 minutes or refrigerate overnight.
  8. Melt almond bark as suggested by packaging.
  9. Dip each cake ball into the melted almond bark to coat entirely, or as you want.
  10. Let cool completely and then serve. Enjoy!
