Sprite Key Lime Pie Cake Balls Recipe for Earth Day

Are you a fan of cake balls? I know I am. They are simple to eat and the clean up is much easier. You can get the perfect combination of cake and frosting in each bite. Not to mention, cake balls are fun to make. My girls and I have become quite fond of bonding over baking.

I recently picked up a box Key Lime Pie cake mix at the store. I saw it and could not refuse. I eat Key Lime Pie yogurt daily. Love Key Lime Pie. Even Key Lime Pie gum is delicious to me. So I had to grab this box, as well as the frosting that went with it. I was not sure what I was going to make but I had the cake mix.

Cake Balls Ingredients

With Earth Day nearing, we decided it would be nice to make a batch of cake balls to commemorate the day (it also just happens to be my sister’s birthday). Therefore, we grabbed our Key Lime Pie cake mix and frosting and began to bake. But, we also wanted to try substituting the oil and eggs the cake mix called for with Sprite (thanks to a tip from my friend, Formula Mom). By using soda, you can lower the fat, cholesterol, and calories of your cake. Perfect! We had to give it a try… especially after tasting how moist her cake balls turn out each time!

Sprite Key Lime Pie Cake Balls

Ingredients: 

  • 12 oz. Sprite (or other lemon lime flavored soda)
  • Key Lime Pie cake mix (or other flavor)
  • Key Lime Pie frosting (or flavor of your choice)
  • Almond Bark
  • Blue food coloring (optional)
  • Sprinkles (optional)

Directions:

  1. Preheat oven according to directions on cake mix box.
  2. Mix cake mix with 12 oz. of Sprite. Beat until well blended. Sprite Cake Balls
  3. Pour into baking pan and bake according to cake instructions.
  4. Once cake has cooled, cut in half and crumble each half in a separate bowl.
  5. Add 2 tbsp frosting (or desired amount) into a bowl for dyeing blue. (Note: I am the queen of working with what I have. You may try white frosting, etc here).frosting
  6. Once you have the blue/teal frosting and key lime pie frosting measured, add to cake crumbles and mix until desired consistency is reached.
  7. Roll each mixture into small balls. I found by rolling all of one color and then the next, the blue did not bleed into the green as much.Sprite cake balls
  8. Once  you have 2 separate colors, roll 2 cake balls together to form one. Sprite cake balls
  9. Chill for 30-45 minutes or refrigerate overnight.
  10. Melt almond bark as suggested by packaging.
  11. Dip each cake ball into the melted almond bark to coat entirely, or as you want.
  12. Decorate with green sprinkles, optional.
  13. Let cool completely and then serve. Enjoy!
