Easy Guacamole Recipe for Cinco de Mayo

Cinco de Mayo

The 5th of May, or Cinco de Mayo, is not Mexican Independence Day as some believe. It is actually the celebration of the Mexican victory at the Battle of Puebla over the French. It is a day to celebrate our Mexican heritage and culture. Growing up I remember going to huge celebrations and learning all about my Hispanic ancestry. Today I still want my children to remember those things as well and to take pride in their Mexican roots. And one of the best things about being Mexican? The food! HaHa! I absolutely love Mexican food. My Juelita made the most amazing homemade tortillas and I have a cousin that can make tamales like no body’s business. My dad’s Menudo cannot be beat and my mom’s guacamole is untouchable! In fact, that is one thing I quickly learned to make and it is one of my favorite recipes. I can eat a whole bowl of guacamole all by itself and in one setting. How about I share the recipe with you?

Easy Guacamole Recipe

Ingredients:

  • 4 Avocados
  • 1 cup Picante Sauce {I prefer Hot Pace Chunky Salsa for the tomatoes and “kick”}
  • 1 diced Onion
  • 1 Lemon
  • Salt, to taste
  • Optional: tomatoes if not using hot sauce

Directions:

  1. Cut avocados in half and peel off outside skin {hold onto 1 seed}. Put in bowl.
  2. Dice onion and add to bowl.
  3. Pour about 1 cup of hot sauce into bowl {this is really to your taste and desired consistency}
  4. Mix all the ingredients until you reach the consistency you prefer
  5. Squeeze juice from lemon and sprinkle a pinch of salt into mixture to taste
  6. Combine all the ingredients and serve {chilling prior to serving is optional}. All done!

*Tip: Remember the avocado seed you held on to? If you add it to the guacamole it will help prevent the browning typically caused by the lemon juice.
