Do you do a lot of summer entertaining? With just our family of 7, and at least 2 to 4 more people that are normally around, we have a party almost nightly. And my kids are snackers. They enjoy sitting around and talking while downing a refreshing drink and tasty snacks. Therefore, the challenge becomes being able to do some summer entertaining on a shoestring budget.

Summer Entertaining on a Shoestring

Since we are most likely found sitting on the patio or lounging in the family room, we find that bite-size snacks typically work best. Therefore, we keep things in the fridge or pantry that make a quick and easy treat. New York Style Bagel Crisps found their way into our pantry and the kids loved them. As a mother, I like that they contain 50% less fat and 18% fewer calories than potato chips. My family can now grab a great new snack that is a healthier choice and packed with flavor. Whether they choose the original Bagel Crisps® or the Mini Bagel Crisps® I know they are making a healthy choice.

Buffalo Chicken Dip

Now, even though we enjoyed the crisp taste of the bagels by themselves, my husband wanted to give the Mini BBQ crisps more of a punch. Therefore, he made up some of his delicious Buffalo Chicken Dip and we gave that a try. Can you say “football season?” Oh yeah! It was a powerful taste combination and I cannot wait to share them at a few tailgate parties soon! The warm taste of the dip coupled with the sweet and tangy crunch of the BBQ crisp seemed to compliment each other well. We did not add anything more than a spoonful to each crisp and they made the perfect bite-size snack. And honestly, we liked the Roasted Garlic Bagel Crisps either alone, paired with spaghetti, or even with a little cream cheese on top. The garlic flavor was perfectly seasoned and worked well on the bagel. But, if you want to try the dip here is the recipe:

Ingredients:

  • 8oz pkg of cream cheese, softened
  • ½ cup of ranch dressing
  • ½ cup of buffalo wing sauce
  • ½ cup of crumbled mozzarella cheese
  • 2 full size chicken breasts

Directions:

  1. Preheat oven to 350°.
  2. Bake chicken breasts until done.
  3. Stir the cream cheese in a casserole dish until smooth. Add in dressing, wing sauce, and crumbled cheese. Stir in chicken until well blended.
  4. Bake for 20 minutes or until the mixture is bubbly. Stir and serve. Serve with Bagel Crisps® or other side.
